- 3 pounds sweet potatoes, peeled and cut into 1½-inch pieces
- ¼ cup olive oil
- 2 teaspoons salt
- ½ teaspoon black pepper (optional)
For 36 servings
- 18–27 pounds sweet potatoes
- 1½ cups olive oil
- 2 tablespoons salt (optional)
- 1½ tablespoons black pepper (optional)
Instructions
- Preheat oven to 425°F (220°C).
- Place sweet potatoes in a roasting pan. Drizzle with olive oil and toss to coat.
- Season with salt and pepper (if using).
- Roast for 30–35 minutes, turning occasionally, until tender and golden brown.
- Serve warm.
