Ingredients
- 2 cups dried pinto beans
- 2 cups vegetable broth
- 4 cups boiling water
- ½ onion, sliced
- 1 chile (optional)
- ½ head garlic
- ½ teaspoon cumin
- 2½ teaspoons salt
Instructions
- Rinse beans thoroughly.
- Layer onion in slow cooker, then add beans and chile.
- Add broth, garlic, cumin, and boiling water.
- Cook on HIGH for 5–6 hours.
- Add salt in final 45 minutes.
- Cook until beans are tender with a flavorful broth.
