Ingredients
- ¼ cup maple syrup
- ¼ cup brown sugar
- 2 tablespoons tomato paste
- 1 tablespoon blackstrap molasses
- 1 tablespoon vegan Worcestershire sauce
- 1 teaspoon apple cider vinegar
- 1 teaspoon yellow mustard
- ½ teaspoon garlic powder
- 1 teaspoon liquid smoke
- 1 teaspoon extra-virgin olive oil
- 1 onion, chopped
- 2 (15-ounce) cans black-eyed peas or navy beans, drained
Instructions
- Preheat oven to 325°F (163°C).
- In a bowl, whisk together maple syrup, brown sugar, tomato paste, molasses, Worcestershire sauce, vinegar, mustard, garlic powder, and liquid smoke.
- Heat oil in a skillet over medium-high heat and sauté onion for 5–7 minutes until lightly caramelized.
- Combine onions, beans, and sauce in a casserole dish and stir well.
- Bake uncovered for 30–45 minutes until thick and caramelized.
