Classic Creamy Vegan Caesar
A rich, garlicky dressing tossed with crisp romaine.

Ingredients
- 1 bulb roasted garlic
- Juice of 1 lemon
- 1 tbsp capers
- 1 tbsp caper juice
- 1/2 tbsp Dijon mustard
- 2 garlic cloves
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 cup olive oil
- Romaine lettuce
- Optional: vegan parmesan, croutons
Instructions
- Roast garlic at 400°F for about 45 minutes until soft.
- Blend garlic, lemon juice, capers, mustard, garlic, salt, and pepper.
- Slowly add olive oil while blending until creamy.
- Toss with romaine lettuce.
- Garnish with parmesan and croutons if desired.
