Ingredients
- 1 onion, diced
- 1 bell pepper, diced
- 3 cups cooked black beans
- 1½ cups cooked pinto beans
- 1 cup corn
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 2 cups vegan cheese, divided
- 2 jars salsa
- 8–10 tortillas
Instructions
- Mix onion, pepper, beans, corn, spices, and half the cheese.
- Spread salsa on the bottom of the slow cooker.
- Layer tortillas, bean mixture, and salsa.
- Repeat layers, finishing with tortillas and cheese.
- Cook on HIGH for 4 hours.
- Add remaining cheese in last 15 minutes and serve.
