Ingredients
- 1–2 onions, diced
- 2 tablespoons olive oil
- 8 cups chopped spinach or greens
- 2 blocks medium-firm tofu
- Italian seasoning
- 5–6 cups tomato sauce
- 3 cups cashew cheese
- 9 lasagna noodles
- 1 cup vegan shredded cheese (optional)
Instructions
- Sauté onion in oil until soft, then add greens and cook until wilted.
- Mash tofu and mix with vegetables and seasoning.
- Spread tomato sauce in baking dish.
- Layer noodles, tofu mixture, cashew cheese, and sauce.
- Repeat layers, finishing with sauce and optional cheese.
- Cover and bake at 350°F (175°C) for 50–60 minutes.
