Lemon-Mint Rice Salad
A fresh, light grain salad with bright lemon and sweet peas.

Ingredients
- 2 cups brown rice
- 3/4 tsp salt (divided)
- 1 tsp olive oil
- 1/4 cup diced onion
- 1/2 cup diced carrots
- 1 cup peas (fresh or thawed)
- 1/4 cup lemon juice
- 1/4 cup olive oil
- Pepper to taste
- 2 tbsp fresh mint, chopped
Instructions
- Cook rice in 4 cups water with 1/4 tsp salt for 35–40 minutes until tender.
- Sauté onion in 1 tsp oil until translucent.
- Whisk lemon juice, olive oil, remaining salt, and pepper.
- Toss warm rice with dressing.
- Add onion, carrots, peas, and mint.
- Cool and adjust seasoning before serving.
