- Tofu and chickpeas
- Garlic, minced
- Dried oregano
- Salt and pepper
- Red wine vinegar
- Olive oil
- Prunes
- Green olives
- Capers
- Bay leaves
- Brown sugar
- Fresh parsley
Instructions
- Combine all ingredients and marinate overnight.
- Preheat oven to 350°F (175°C).
- Spread mixture in baking dish and pour marinade over.
- Bake 50–60 minutes, basting occasionally.
- Transfer to serving dish and garnish with parsley.
