Ingredients

  • 1 lb noodles
  • Green onions, carrot, red pepper, cucumber
  • 1 avocado
  • 1/4 cup cashews
  • Marinated tofu
  • Fresh herbs

Dressing

  • 2 tbsp sesame oil
  • 2 garlic cloves
  • 2 tbsp rice vinegar
  • 1/2 cup soy sauce
  • 1 cup water
  • 1/4 cup maple syrup
  • 1 tsp cornstarch
  • Lime juice

Instructions

  1. Cook noodles and rinse with cold water.
  2. Prepare vegetables and tofu.
  3. Heat oil, garlic, and spices briefly.
  4. Add remaining dressing ingredients and simmer until slightly thickened.
  5. Toss noodles and vegetables with dressing.
