Fresh Herb Pasta Salad
A light, versatile pasta salad with bright citrus flavor.

Ingredients
- 8 oz pasta
- 2 tsp olive oil
- 1/4 cup kale, chopped
- 1/2 cup cherry tomatoes
- 1/2 cup olives
- 1 cucumber, chopped
- 1/4 cup pine nuts
Vinaigrette
- 3 tbsp olive oil
- 3 tbsp red wine vinegar
- 1/2 tsp lemon zest
- 1 tsp lemon juice
- 1 tsp maple syrup
- 1/2 tsp salt
- 1/2 tsp pepper
- Optional chili flakes
- Fresh basil and parsley
Instructions
- Cook pasta and cool.
- Mix vinaigrette ingredients.
- Toss pasta with dressing.
- Add vegetables and nuts and mix well.
