Ingredients

  • 1 onion, chopped
  • 1 bell pepper, diced
  • 4 cloves garlic, minced
  • ¼ cup vegetable broth
  • 1 (28 oz) can diced tomatoes
  • 1 package veggie crumbles
  • 2 cups beans
  • 1 cup corn
  • 1 cup salsa
  • 1–2 teaspoons chili powder
  • 1 teaspoon oregano
  • ½ teaspoon cumin

Instructions

  1. Sauté onion, pepper, and garlic in broth for 10 minutes.
  2. Add tomatoes, crumbles, beans, corn, salsa, and spices.
  3. Bring to a simmer and cook for 5 minutes.

Reduce heat, cover, and simmer for 40–45 minutes, stirring occasionally
