Ingredients
- 1 onion, chopped
- 1 bell pepper, diced
- 4 cloves garlic, minced
- ¼ cup vegetable broth
- 1 (28 oz) can diced tomatoes
- 1 package veggie crumbles
- 2 cups beans
- 1 cup corn
- 1 cup salsa
- 1–2 teaspoons chili powder
- 1 teaspoon oregano
- ½ teaspoon cumin
Instructions
- Sauté onion, pepper, and garlic in broth for 10 minutes.
- Add tomatoes, crumbles, beans, corn, salsa, and spices.
- Bring to a simmer and cook for 5 minutes.
Reduce heat, cover, and simmer for 40–45 minutes, stirring occasionally
