Ingredients
- Mixed mushrooms, chopped
- 1 cup chopped onion
- 4 cloves garlic
- Tomato paste and crushed tomatoes
- Spinach, thawed and drained
- Lasagna noodles
- Vegan ricotta and mozzarella
- Fresh basil
- Olive oil
Instructions
- Cook mushrooms and onion until moisture evaporates.
- Add garlic, tomato paste, and tomatoes; simmer to make sauce.
- Cook and drain noodles.
- Layer sauce, noodles, spinach, and cheeses in a baking dish.
- Repeat layers, finishing with sauce and cheese.
- Bake at 350°F (175°C) for 50 minutes.
