Mediterranean Roasted Tomato Pasta

A rich, savory pasta with roasted tomatoes and olives.

Ingredients

  • 2 1/2 lbs cherry tomatoes
  • 1/3 cup olive oil
  • 5 garlic cloves
  • 1 tbsp balsamic vinegar
  • 1/4 tsp chili flakes
  • 3 tbsp fresh oregano
  • 1 lb pasta
  • 1/2 cup Kalamata olives
  • 1/4 cup capers
  • Optional: vegan feta, pine nuts

Instructions

  1. Roast tomatoes with oil, garlic, vinegar, and chili flakes at 375°F for 45 minutes.
  2. Cook pasta until al dente.
  3. Toss pasta with roasted tomato mixture, olives, and capers.
  4. Serve topped with feta (dairy or vegan) and pine nuts if desired.
