Mediterranean Roasted Tomato Pasta
A rich, savory pasta with roasted tomatoes and olives.

Ingredients
- 2 1/2 lbs cherry tomatoes
- 1/3 cup olive oil
- 5 garlic cloves
- 1 tbsp balsamic vinegar
- 1/4 tsp chili flakes
- 3 tbsp fresh oregano
- 1 lb pasta
- 1/2 cup Kalamata olives
- 1/4 cup capers
- Optional: vegan feta, pine nuts
Instructions
- Roast tomatoes with oil, garlic, vinegar, and chili flakes at 375°F for 45 minutes.
- Cook pasta until al dente.
- Toss pasta with roasted tomato mixture, olives, and capers.
- Serve topped with feta (dairy or vegan) and pine nuts if desired.
