Creamy Dill Potato Salad
A classic creamy salad with fresh dill and tangy accents.

Ingredients
- 6 potatoes, cubed
- 1/3 cup vegan mayonnaise
- 1/4 cup fresh dill
- 2 tbsp vinegar
- 1 tbsp lemon juice
- 2 tbsp Dijon mustard
- 3 dill pickles, chopped
- Optional celery
- Salt and pepper
Instructions
- Boil potatoes until tender; drain and cool.
- Mix remaining ingredients in a large bowl.
- Toss potatoes with dressing.
Adjust seasoning and chill before serving
