Tangy Herb Rice Salad
A simple, flavorful grain salad with bright Mediterranean notes.

Ingredients
- 4 cups cooked brown rice
- 1/4 cup sun-dried tomatoes
- 1 fresh tomato, chopped
- 2 tbsp sunflower seeds
- 2 tbsp parsley
- 2 tbsp lemon juice
- 2 tbsp olive oil (optional)
- 2 tsp fresh basil
- 1/4 tsp garlic powder
- 1/4 tsp salt
- Pinch pepper
Instructions
- Soak sun-dried tomatoes in hot water for 30 minutes; drain and chop.
- Combine rice, tomatoes, seeds, and parsley.
- Mix dressing ingredients separately.
- Toss with rice mixture and adjust seasoning.
