Asian-Inspired Noodle Salad with Tofu

Ingredients
- 1 lb noodles
- Green onions, carrot, red pepper, cucumber
- 1 avocado
- 1/4 cup cashews
- Marinated tofu
- Fresh herbs
Dressing
- 2 tbsp sesame oil
- 2 garlic cloves
- 2 tbsp rice vinegar
- 1/2 cup soy sauce
- 1 cup water
- 1/4 cup maple syrup
- 1 tsp cornstarch
- Lime juice
Instructions
- Cook noodles and rinse with cold water.
- Prepare vegetables and tofu.
- Heat oil, garlic, and spices briefly.
- Add remaining dressing ingredients and simmer until slightly thickened.
- Toss noodles and vegetables with dressing.
- Serve with toppings.
