Thick, Creamy, and Nourishing
A hearty blended soup packed with vegetables and protein-rich peas.

Ingredients
- 2 tbsp olive oil
- 3 large onions
- 3–4 cloves garlic
- 12 carrots
- 8 celery stalks
- 4 cups broccoli
- 3 cups zucchini
- Optional: squash, turnip
- 3.5 cups green split peas
- 12 cups water
- 2 tsp lemon juice
- 2 vegetable stock cubes
- 1 tsp each parsley, marjoram, basil, thyme
- 1/2 tsp oregano, savoury
- 1/4 tsp each celery salt, sage, pepper
- Optional spices: coriander, tarragon
Instructions
- Sauté onions in oil until soft; add garlic and cook briefly.
- In a separate pan, sauté carrots and celery until lightly browned.
- Combine all vegetables in a large pot.
- Add peas, water, stock, and seasonings.
- Bring to a boil, then simmer covered until peas are soft and creamy.
- Blend until smooth.
- Reheat and adjust seasoning before serving.
