Ingredients
- 1 tablespoon vegetable oil
- 1 cup diced celery
- 1 cup diced carrots
- ½–1 onion, diced
- 1 clove garlic, minced
- 3 cups cooked or canned black beans
- 1 cup chopped or canned tomatoes
- ¼ cup tomato paste
- 1 teaspoon basil
- 1 teaspoon chili powder
- 1 teaspoon oregano
- ½ teaspoon salt
- ¼ teaspoon pepper
- ¼ cup chopped fresh parsley
- 1 tablespoon lime juice
- 1 cup vegetable stock
Instructions
- Heat oil in a large pot over medium heat and sauté celery, carrots, onion, and garlic for 5 minutes.
- Add stock, beans, tomatoes, tomato paste, basil, chili powder, oregano, salt, and pepper.
- Cover and simmer for 20 minutes, then uncover and simmer another 20 minutes, adding stock if needed.
- Stir in parsley and lime juice just before serving.
