Ingredients
- 2¼ cups cooked chickpeas
- 3 medium onions, finely chopped
- 2 medium tomatoes, chopped
- 1 tablespoon grated fresh ginger
- 4 tablespoons lemon juice
- 6 tablespoons vegetable oil
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- ½ teaspoon turmeric
- 2 teaspoons garam masala
- ½ teaspoon cayenne
- Salt to taste
Instructions
- Heat oil in a large pot and sauté onions for 8–10 minutes until browned.
- Add tomatoes and cook for 5–6 minutes, mashing slightly.
- Stir in coriander, cumin, and turmeric and cook briefly.
- Add chickpeas, a small amount of cooking liquid, salt, garam masala, and cayenne.
- Simmer covered for 20 minutes.
- Stir in lemon juice and ginger mixture before serving.
