Ingredients
- 1 tablespoon vegetable oil
- 1 cup chopped onion
- ¾ cup chopped carrots
- 3 cloves garlic, minced
- 1 cup chopped bell pepper
- ¾ cup chopped red pepper
- ¾ cup chopped celery
- 1 tablespoon chili powder
- 1½ cups chopped mushrooms
- 1 (28 oz) can tomatoes
- 1 (19 oz) can beans
- 1 (11 oz) can corn
- 1 tablespoon oregano
- Salt and pepper to taste
Instructions
- Heat oil in a large pot and sauté onion, carrots, and garlic until tender.
- Add peppers, celery, and chili powder and cook until vegetables soften.
- Stir in mushrooms and cook for 4 minutes.
- Add tomatoes, beans, and corn.
- Bring to a boil, reduce heat, and simmer for 20 minutes.
