Ingredients
Potato Topping
- 5 large potatoes
- 3 tablespoons olive oil
- ½ cup plant milk
- Salt and pepper
Filling
- 1 tablespoon olive oil
- 2 cups onion, diced
- 2 cups celery, chopped
- 6 cloves garlic
- 2 packages plant-based ground
- 2 tablespoons tamari
- 2 tablespoons vegan Worcestershire sauce
- 2 teaspoons thyme
- 1½ cups corn
Instructions
- Cook and mash potatoes with oil, milk, salt, and pepper.
- Sauté onion, celery, and garlic until tender.
- Add plant-based ground and seasonings and mix well.
- Spread mixture in baking dish and top with corn.
- Spread mashed potatoes over top.
- Bake at 350°F (175°C) for 20 minutes until heated through.
