Ingredients
- 1 cup onion
- 1 tablespoon garlic
- 1 tablespoon ginger
- 1 cup carrots
- 2 cups peppers
- 1 cup tofu
- ¾ cup pineapple juice
- ¼ cup brown sugar
- ¼ cup vinegar
- 2–3 teaspoons cornstarch
Instructions
- Sauté onion, garlic, ginger, carrots, and peppers for 5 minutes.
- Mix pineapple juice, sugar, vinegar, and cornstarch.
- Add sauce and tofu to pan.
- Stir until thickened and simmer briefly.
- Serve over rice.
