Ingredients
- 2 cans black or pinto beans, drained (reserve liquid)
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon oregano
- 1 cup reserved bean liquid or water (as needed)
- 1 tablespoon lime juice (optional)
- ½ teaspoon salt
Instructions
- Heat oil in a skillet over medium heat and sauté onion for 5 minutes until softened.
- Add garlic and oregano and cook for 1 minute.
- Stir in beans and liquid and bring to a simmer.
- Cook for about 10 minutes until slightly thickened.
- Mash or blend part of the mixture to desired consistency.
- Stir in lime juice and salt and serve.
