With Lime, Cumin, and Oregano
A hearty, fiber-rich soup with warm spices and a bright finish of lime.

Ingredients
- 1 tbsp vegetable oil
- 1 cup diced carrot
- 1 cup diced celery
- 1/2 onion, diced
- 1 clove garlic, minced
- 3 cups cooked black beans
- 4 cups vegetable stock
- 1/4 cup tomato paste
- 1 1/2 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp dried thyme
- 2 tsp lime juice
- Salt and pepper to taste
Instructions
- Heat oil in a large pot over medium heat.
- Sauté carrots, celery, onion, and garlic for 5 minutes.
- Add beans, stock, tomato paste, cumin, oregano, and thyme.
- Bring to a simmer, cover, and cook for 20 minutes.
- Stir in lime juice just before serving.
- Season with salt and pepper to taste.
