Large-Batch Community Soup
A robust, large-scale soup ideal for groups and gatherings.

Ingredients
- 1 cup olive or canola oil
- 4 large onions, chopped
- 8 carrots, diced
- 8 ribs celery, diced
- 6–8 leeks, sliced
- 8–12 cloves garlic
- 1/4 cup dried basil
- 1 tbsp oregano
- 1 tsp marjoram
- 1 tsp celery seed
- 1 tbsp salt
- 3–4 cans tomato paste
- 6–8 L vegetable stock
- 9–12 cups tomatoes
- 6–8 potatoes, diced
- 3–4 cups cabbage
- 3–4 cups zucchini
- 3–4 cups green beans
- 1 large can white beans
- 3–4 cups cooked macaroni
Instructions
- Heat oil in large pots and sauté onions, carrots, leeks, celery, and garlic for 5 minutes.
- Stir in herbs and tomato paste.
- Add stock, tomatoes, potatoes, and cabbage. Bring to a boil.
- Reduce heat and simmer 45 minutes.
- Add green beans and zucchini and cook 15 minutes.
- Stir in cooked pasta.
- Adjust seasoning and serve.
