Greek Salad (Large Batch)
Fresh Mediterranean Salad
A colorful, crowd-friendly layered salad.

Ingredients
- 5 heads romaine lettuce
- 8–10 tomatoes
- 6–8 bell peppers
- 2–3 cucumbers
- 12 oz feta (or vegan feta)
- 3 cans black olives
Dressing
- 2 cloves garlic
- 1/2 cup olive oil
- 2 tbsp lemon juice
- 5 tbsp red wine vinegar
- 1 1/2 tsp Dijon mustard
- 1/2 tsp sugar
- 1/4 tsp salt
- Optional basil and oregano
Instructions
- Chop and layer salad ingredients in a large bowl.
- Whisk or blend dressing ingredients until emulsified.
- Toss just before serving or serve dressing on the side.
